Cowboy Caviar

 Cowboy Caviar Dip

I first had this dip/salsa at a BBQ on a very hot day. Because this recipe does not have mayonnaise it holds up in hot weather. Pair it with your favorite chip and a beer and you have an easy appetizer.

Ingredients:

  • 1 can black eyed peas (drained)
  • 1 can black beans (drained)
  • 1 can diced tomatoes (rinsed)
  • 1 small can picked jalapeños (diced)
  • 1 orange bell pepper (diced)
  • 1 bunch green onions (chopped)
  • 1 bag frozen corn
  • Cilantro (optional)
  • Italian dressing
  • Avocado

Directions:

  1. Mix all but avocado and let sit overnight in fridge. 
  2. Dice avocado and mix before serving.
  3. Enjoy with lots of chips on the back deck!
