Marinated Flank Steak

Received this recipe from Janice Steinkopf Black. I have made flank steak ahead of time and frozen the uncooked meat and marinade together to be used in the future. The original marinade reminds me of teriyaki

Ingredients:
  • 2# flank steak
Marinade:
  • 3/4 c soy sauce
  • 1/4 c water
  • 1/4 c honey
  • 1/2 c oil (canola)
  • 1 T. garlic
  • 3 scallions
Mix all ingredients; put steak in a ziplock bag with the marinade and refrigerate 2 hours or longer. Pour off the marinade into a saucepan. Bring to a boil, then simmer to reduce in volume.

Meanwhile put meat on grill-you need to determine doneness vs. time.
  • 2-3 minutes per side for rare
  • 4-5 minutes per side for medium
  • 6-8 minutes for well done.
Take meat off grill. Let set for 3 minutes. Cut into strips against the grain and put into deep dish. Pour marinade over meat.

**REMEMBER THAT MEAT WILL CONTINUE TO COOK WHEN AT REST AND IN THE HOT MARINADE.

I have also experimented with other types of marinade with great success, (ie Italian dressing, etc).
