In our kitchen there are cookbooks which open directly to the most-used recipe. In The Tresury of Creative Cooking by the Editors of Consumer Guide, (Copyright 1992 by Publications International, Ltd) the book will consistently open to pages 294 and 295 and the recipe for Sunrise Pancakes. With the convienence of making pancakes from a box or mix, it may seem weird to make pancakes from scratch. I think this recipe, which takes a bit more time than the just-add-water mixes, is well worth the modest investment in time.
Makes about 8 pancakes
Ingredients:
Directions:
- 1 cup All-Purpose Flour
- 2 Tbsp Sugar
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 2 Eggs, slightly beaten
- 1/2 cup Vanilla Yogurt
- 1/2 cup Water
- 2 Tbsp Butter of Margarine, melted
- Oil for frying
- Combine in a large bowl:
- flour
- sugar
- baking powder
- baking soda
- salt
- Combine in a medium bowl:
- eggs
- yogurt
- water
- melted butter
- Pour liquid ingredients into the dry ingredients. Stir until moistened.
- Preheat griddle or large skillet over medium heat. Add about a teaspoon of oil to the pan each time you fry a batch. Pour about 1/4 cup batter onto the hot griddle for each pancake; spread batter out to make 5-inch circles. Cook until tops of pancakes are bubbly and appear dry; turn and cook until browned, about 2 minutes.
