Sweet Potato Casserole

This is my sister Mary's contribution to the Thanksgiving table when she comes back home.  Here's a hint: Have the recipe cards printed out in advance before your guests arrive.
  • 3 cups mashed (cooked) sweet potatoes or winter squash
  • ¼ - ½ cup brown sugar
  • ½ cup butter or margarine
  • 3 eggs well beaten
  • 1 teaspoon vanilla
  • ½ teaspoon ground nutmeg
  • 1 cup sour cream
  • a pinch of salt
  • pinch of baking soda
  • marshmallows, pecans or raisins for topping

Mash sweet potatoes or winter squash well.
Stir in the rest of the ingredients (except baking soda and salt), mix well.
Stir in baking soda and salt.
Spread in 1 ½ quart baking dish
Bake uncovered for 35-45 minutes at 350°.
