Doc's Chili

This recipe arrives on the blog by way of The Biggest Loser: 30-Day Jump Start.  With this the third, chili recipe, we now have as many chili recipes as we do banana bread recipes.  Each one has their strengths.  This chili is low in fat, simple to prep, quicker to cook and remarkably flavorful.  Ground turkey is the base of this recipe. If you are not a "ground turkey" person, this recipe may change your mind.  As with all chili, be certain to serve it with hot corn bread.

INGREDIENTS:

  • 3 cups yellow onions, chopped
  • 1 lb lean ground turkey (or lean turkey sausage)
  • 2 tablespoons chili powder
  • 1 tablespoon fresh oregano, chopped or 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon ground mustard
  • ¼ teaspoon ground cinnamon (not an ingredient from the original recipe)
  • 2 tablespoons garlic, chopped
  • 1½cups pinto beans, cooked or 1 (15 ounce) can pinto beans, rinsed and drained
  • 1½ cups black beans, cooked or 1 (15 ounce) can black beans, rinsed and drained
  • 3 cups diced tomatoes or 1 (28 ounce) can roasted diced tomatoes, undrained
  • 1 cup fat free chicken broth
  • ½ cup black olives (used as a garnish)
  • ½ cup green onions, chopped. (also used as a garnish)



DIRECTIONS:

  1. Spray a large saucepan or Dutch oven with a few sprays of cooking oil spray. 
  2. Add onion and saute over medium-high heat until soft and just starting to brown. 
  3. Add ground turkey or sausage;cook over medium high heat, breaking up meat with a spoon, until cooked through, about 6 minutes. 
  4. Add chili powder, oregano, cumin, mustard, cinnamon, garlic, beans, tomatoes, and broth. 
  5. Bring to a boil over high heat and then reduce the heat to a simmer. 
  6. Cover and let simmer for 20 minutes.

Garnish with olives and green onions or cilantro and serve immediately.
