Egg Bake

Kathy's sister was the source of this recipe.  Where she got it, I am not certain.  It is the go-to dish for weekends when the kids are home.  If it is Christmas or Easter morning you can be sure a pan of Egg Bake will be served for breakfast.  From preparation to clean-up everything about this recipe is simple.  The left-overs will heat up nicely in the microwave in about the same time it takes to make a cup of coffee in the Keurig.

Preparation Time:  10 minutes
Cooking Time:  50 minutes
Makes: 12 servings



Ingredients:

  • 1 dozen eggs
  • 1/2 cup milk
  • 10 oz Breakfast Sausage - We use 9.6 oz bag Jimmy Deans Fully Cooked Hearty Sausage Crumbles-Original
  • 2 cups of shredded cheese - We use Crystal Farms Mexican Style-4 Cheese Blend
  • 20 oz bag of Shredded Potatoes-thawed
  • 1/4 tsp black pepper

Directions:

  • Preheat oven to 350° F.
  • Spray 9 × 13 glass or ceramic casserole with cooking spray.
  • In a large bowl, whisk eggs until yokes and whites have combined
  • Whisk milk into the eggs
  • Fold in combine remaining ingredients
  • Pour into greased pan
  • Bake for 50 minutes at 350° 
  • Let sit for 5 minutes while the table is gets set.
Serve as is or with a spot of hot sauce.  Store leftovers in refrigerator and reheat in microwave.
