Strawberry Pie

Rob's  birthday is in July which is prime strawberry season.  When he was a kid, and I asked him what kind of birthday cake he wanted, he often asked for a strawberry pie instead.
  • 1 baked pie shell (I use Pillsbury Pie Crusts)
  • 1 pkg. Strawberry Junket Danish Dessert mix (found in the pudding section)
  • 1-10 oz pkg of frozen strawberries
  • 3 t. sugar
  • Put thawed strawberries in a blener with enough H2O to make 2.25- 2.5 cups of liquid and blend 'til smooth.
  • Pour into saucepan, add pudding.
  • Stirring constantly, cook over medium heat 'til bubbling. Boil 1 minute. (Mixture should be thick, not runny, but pourable).
  • Cool.
  • Pour a little cooled pudding mixture over the bottom of the crust.
  • Put whole strawberries into the pie crust.
  • Pour cooled pudding mixture over berries.
  • Chill pie 4-6 hours.
  • Add whipped cream to serve.

****Use Raspberry Danish Dessert with fresh raspberries following the same directions.
