- 1 baked pie shell (I use Pillsbury Pie Crusts)
- 1 pkg. Strawberry Junket Danish Dessert mix (found in the pudding section)
- 1-10 oz pkg of frozen strawberries
- 3 t. sugar
- Put thawed strawberries in a blener with enough H2O to make 2.25- 2.5 cups of liquid and blend 'til smooth.
- Pour into saucepan, add pudding.
- Stirring constantly, cook over medium heat 'til bubbling. Boil 1 minute. (Mixture should be thick, not runny, but pourable).
- Cool.
- Pour a little cooled pudding mixture over the bottom of the crust.
- Put whole strawberries into the pie crust.
- Pour cooled pudding mixture over berries.
- Chill pie 4-6 hours.
- Add whipped cream to serve.
****Use Raspberry Danish Dessert with fresh raspberries following the same directions.
