The first time Kathy made this recipe, after the first bite, I knew this recipe was going to go on the blog. As a side dish for grilled chicken breast or served as a meal in itself, this is a keeper.

- 1 box Barilla Whole Grain Linguine
- 1 large red onion, thinly sliced
- 2 tsp dried thyme
- 1/3 cup extra virgin olive oil, divided
- 1 1/2 pints (3 cups) cherry tomatoes
- 3 cloves garlic, minced
- 3/4 cup water
- salt and pepper to taste
- 1/2 cup Pecorino Romano cheese, grated
- Cook the pasta according to the package directions.
- Meanwhile, saute onions and thyme in half the olive oil over low heat for 12 minutes.
- Add cherry tomatoes, garlic and water and simmer for 8 minutes.
- Season the sauce with salt and pepper.
- Drain the pasta and toss with the sauce.
- Add cheese and remaining olive oil and toss again.
