Linguine with Cherry Tomatoes and Pecorino Romano Cheese



The first time Kathy made this recipe, after the first bite, I knew this recipe was going to go on the blog.  As a side dish for grilled chicken breast or served as a meal in itself, this is a keeper.

  • 1 box Barilla Whole Grain Linguine
  • 1 large red onion, thinly sliced
  • 2 tsp dried thyme
  • 1/3 cup extra virgin olive oil, divided
  • 1 1/2 pints (3 cups) cherry tomatoes
  • 3 cloves garlic, minced
  • 3/4 cup water
  • salt and pepper to taste
  • 1/2 cup Pecorino Romano cheese, grated
  • Cook the pasta according to the package directions.
  • Meanwhile, saute onions and thyme in half the olive oil over low heat for 12 minutes.
  • Add cherry tomatoes, garlic and water and simmer for 8 minutes.
  • Season the sauce with salt and pepper.
  • Drain the pasta and toss with the sauce.
  • Add cheese and remaining olive oil and toss again.
